How To Cook Gluten Free Lahmajoun
With Organic Ground Meat?

Today, I’m sharing Armenian-Lebanese lahmajoun recipe. I’ve asked my grandmother if we can make a homemade lahmajoun (organic and gluten-free) and share the recipe with my readers. We went to the market, Sprouts to be exact and bought the organic ground beef along with gluten-free tortilla and other ingredients. We enjoyed baking lahmajoun together in my kitchen as my grandmother shared a few memories of her childhood when her mother baked lahmajoun with her.
I would have to say lahmajoon is similar to pizza but without cheese if I were to compare to another dish. I have always loved lahmajoun, ever since I can remember. I love eating lahmajoon when it’s popping hot, drizzled with lemon over it and enjoy drinking Tahn, the Armenian yogurt drink. It’s absolutely one of my fave –Yum!

Lahmajoun is very easy to bake, it’s healthy and perfect when on to-go or packing lunch for kids. I always bake a bit extra and keep them in the freezer. When I run out of ideas packing lunch for kids I just grab the frozen lahmajoon from the freezer the night before and let it defrost overnight. In the morning, I just pack the lahmajoon with lemons and a bottle of Tahn and pop it in my kid’s lunch boxes.


Toping Ingredients:

  •  2 garlic cloves
  •  1 medium onion chopped
  • salt & pepper
  • 1 small green pepper chopped
  • 1 pound ground ground beef or lamb
  •  1 (6-ounce) can tomato paste
  •  1 (14 1/2-ounce) can diced tomatoes
  •  1/4 cup chopped parsley leaves removing the stems.
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • pack (8 to 10 count) thin tortilla bread or pita bread.
  • lemon wedges, to serve


Step 1:  In a large mixing bowl, add the ground meat and combine all the topping ingredients including diced onions, garlic, diced tomatoes and green pepper. Add tomato paste, diced parsley, cumin, cayenne, salt and black pepper. Mix the meat mixture until the ingredients blend in well. As you mix along the way…

Step 2: Spread a thin layer of the meat mixture onto flour tortillas all the way to the edge. The topping should be as thin as the crust.

Step 3: Place 3 tortillas on each baking tray. Make sure it doesn’t overlap each other. What I like to do is use a foil paper or backing sheets.

Step 4: Bake in a preheated oven 450 F. until the meat is cooked, vegetables are tender and the crust begins to brown around the. If the tortilla begins to inflate in the oven just pop it with a fork from the top.

Step 5: Prior to serving lahmajoon, squeeze a lemon over the top, fold the pizza into quarters and voila! Enjoy your lahmajoon!
